A good quarterback always tries to keep two hands on the ball. This is especially true when you find yourself scrambling. When you scramble you need to keep your eyes downfield as much as you can and this makes you vulnerable to a lineman trying to slap at the ball to cause a fumble. When you have two hands on it you reduce that risk.
